Indian Spiced Roast Cauliflower and Dipping Sauce

When you're craving really bold flavor. The smoked paprika with the cooling "yogurt" dip, makes this so satisfying. It feels like it should be really unhealthy, but guess what, it's a great way to get your veggies in.

Ingredients

for the cauliflower:
- 1 head cauliflower broken into florets
- 1/4 tsp turmeric
- 1/2 tsp each of smoked paprika, salt, garlic powder
- 2 TB EVOO
for dip:
- 1 C yogurt of choice (I used cashew)
- 1/2 juice of a lemon
- 1/2 tsp garam masala
- S&P to taste

Directions

for caulifower:
- set oven to 425 degrees
- mix spices together
- combine with oil and toss with florets
- evenly distribute cauliflower florets on baking pan (can also put aluminum foil on pan, but I don't)
- roast for 25-30 minutes or until golden brown
for dip:
- just combine. adjust as needed.
