Pitta Quinoa Side

Cucumber, mint and water chestnuts cool off the hottest day and most fiery temperament! The protein from the quinoa and the slightest touch of EVOO keeps you sated without feeling weighed down. I'll throw it into a bowl of salad greens to make it a meal. Red onion can be delicious in it too, but not if your pitta is flaring up.

Ingredients

1/2 C cooked quinoa

1/2 raw cucumber diced (deseeded)

1/4 C water chestnuts

3 TB (roughly) chopped mint

1/2 lemon squeezed

1 TB EVOO

Salt & Pepper to taste

Directions

Combine all ingredients. Yes, it's that easy because really, who wants to fuss in summertime?
